To anyone struggling to find the answer, I may have found it. I spent almost 2 hours searching through countless forums, and came across this response:

Google's steps are dated they as are constantly updating their UI and navigation, so I will give an updated step-by-step:
- Go to Google (sign into the account you wish to add) and Click the Google Account Icon
- Click 'Manage Your Google Account'
- Click the 'Security' Tab and scroll down to 'How you sign in to Google'
- Click '2-Step Verification'
- Scroll to the bottom of the page and click 'App Passwords'
- You are now at the page where you can make an auto-generated password for Outlook. To do so, select 'Mail' from the App drop-down options, and 'Windows Computer' from the Device drop-down options, then click 'Generate'
- Copy the generated password
- Open Outlook and setup the Gmail account using 'Outlook Mail Setup' (File>Account Settings>Manage Profiles>Yes>Email Accounts...>New...)
- You DO NOT need to use Manual Setup. Auto setup will work as long as you paste the auto-generated password you created and copied in Steps 6 and 7.
- Boom! Say goodbye to opening Gmail in your browser!
