i'm wondering when those gift cards will be available again? it's been almost a few months since i started collecting points, and i'm getting tired of waiting....

Microsoft restocks these, but there’s no exact date or timeline shared.

Sadly, we don’t have control over restocking from here, and support doesn’t have a fixed ETA either. It’s more of a wait-for-restock situation.

I suggest sharing your feedback directly with Microsoft Rewards team. You can do that by visiting https://rewards.bing.com then scrolling down to the very bottom and selecting "Provide feedback".
