How do I know if I have the latest edge version? I checked settings but that didn’t help

Microsoft Edge is updated with the rest of Windows, by Windows Update.

In addition, you can always open Microsoft Edge and go to: Help and Feedback > About Microsoft Edge

Doing that will automatically update Microsoft Edge to its latest version, if it needs to be updated.

    To check whether Microsoft Edge is up to date and see which version is installed:
