You'll have to remove the old license first:

Then you may be able to activate, or you might have to reinstall to trigger activation.

Follow these steps to activate your Microsoft 365 subscription for Word, Excel, and PowerPoint on your Mac:

Remove Previous Version: If you had a university membership, remove any previous versions of Microsoft Office (Word, Excel, and PowerPoint) from your Mac.

Sign In: When you open any Office app (for example, Word), you should be requested to sign in. Sign in using the Microsoft account that is linked to your Microsoft 365 subscription.

Activation: After signing in, Microsoft 365 should instantly activate, giving you access to Word, Excel, PowerPoint, and other Office programmes.

If you have any problems throughout this procedure, you can contact Microsoft Support for help with activation.

    Hi @Andrea Di Conza ,

Firstly, make sure that you have assigned a license for Office to your Microsoft 365 account. Then as @John Korchok and @Iftikhar Ali said, just remove the old license and sign in Office applications. You can use this reset tool: https://office-reset.com/ and select "Reset License and Sign-In" if there is any trouble.
