This is really embarrassing, a company like Microsoft has this kind of basic problems for months! I have the same problem and no one has any solution.
Backup is too large

When I try to backup the app it comes up with the message: "Your backup is too large. Cannot save to the cloud."
I have tried updating the app and confirm that I have enough storage space on my account. I have a Samsung S20.

Microsoft Authenticator is a popular app, and more and more will run into this issue.
I checked my OneDrive, and I have used about 0,03 GB out of the 5 GB available. So there should be plenty of space for Authenticator backups! -

I removed the last 4 or 5 MFA accounts I had, and this solved my issue.
I removed the last few accounts which I didn't really need to be on my MFA list, including two for which we were no longer the IT support and admins for, and this resolved my issue.
I am not sure if removing the accounts which no longer exist caused the issue somehow (probably not), but I am now able to backup my authenticator without issues.
I have added some in the meantime, and it's still backing up fine.
