Hi anderson oliveira,
In Project Settings, Under Pipelines > Settings > General. Make sure 'Disable creation of classic build pipelines' and 'Disable creation of classic release pipelines' in turned off, to have classic editor shown after creating a project.
If those options are disabled, go to organizational level and do the same in 'Organization Settings'.

In my case this option is turned on, and cannot be turned off.

If the option is greyed out at the Project level, than you first have to enable the option at the organization level: Organization settings, Under Pipelines > Settings > Disable creation of classic build pipelines: OFF.
