Can you please make sure on the model of the device if this is a Surface Book 2 or a Surface Book? To confirm, you may enter the serial number here: Surface Support for Business Online Service Center - Welcome. Surface Book 2 should have either 8th Gen Intel® Core™ i7-8650U quad-core processor or 8th Gen Intel® Core™ i5-8350U quad-core processor which are compatible with Windows 11 (7th Gen Intel® Core™ i5-7300U dual-core processor not compatible). See: Surface Book 2 features (microsoft.com). Intel® Core™ i7-6600U is used on Surface Book 1.

Regarding with replacing the processor concern, I'm sorry but the Surface was built compact and therefore, we could (not allowed also) not physically open the device to replace the processor.
