The Surface Book 3 with the NVidia GPU is what you want for Adobe Illustrator.
Surface Book 3 vsSurface Pro 7
I am considering a Surface Book 3 and Surface Pro 7. The device will be used for when I travel and want to do work. I use Adobe Illustrator and IBM SPSS. I need a device that can be used for virtual meetings (primarily using Zoom). I currently have an older Surface Book and the programs I need work on it.
Can you let me know the pros & cons of each device for my needs?

Thanks for reaching Microsoft Community and posting your concern here.
Surface Book 3 and Surface Pro 7 are undeniably good devices because of its portability. When it comes to performance, Surface Book 3 is much more powerful than Surface Pro 7 as it's designed for pro-grade performance for graphic design, app development, video and social content creation, and the best, most immersive gaming in a Surface laptop which is a best suit for you. On the other hand, Surface Pro 7 is a versatile 2-in-1 laptop for working and playing your way, shopping, banking, on-screen writing, and streaming Netflix.
