loyall, here's how you can uninstall old Internet Explorer:
The old Edge should be removed automatically now that the New one was installed. But you can try to remove it by check the following steps:

I got to my email via IE.
To late now. May not be a good idea.
It does not hurt to have more than one way to connect to whatever you may like to do.
I have Windows 10.
I have IE, not listed in Start Menu or Programs
I have Edge, installed on June 2020, automatically.
Edge is listed in Programs.
Edge is on "Desktop" and bottom line right of "Start"
Auto manufactures discontinued Chrome years ago. Leave it to Software companies to "bring it back".
Microsoft is using Goo's names.
I have No "Apps and Features" listed in "start Menu".
I have No "Installed Features".
PUP to Hundreds of Thousands is a Pure PUP.
If is wanted to so anything about what you asked, I could not, because I do not have anything mentioned on/in my computer.
Any Ideas Leonardo?

Since legacy Edge is not listed in the Start menu, what benefit to rename the program file in Windows/SystemApps as recommended in the link you provided?

After I uninstalled IE following your directions. It is still listed in the Start Menu and the program opens.
OK. Now I see. It did not uninstall until I restarted Windows.
