... my windows pdf are opening in Microsoft Edge by default.
Are you referring to PDFs (a) that you're downloading from a website, or (b) in a folder on your computer?
(a) You can configure Edge to open PDFs in your preferred viewer: click ⋯ (Settings and more) > Settings > Site permissions > PDF documentsand turn on Always open PDF files externally.
(b) The Windows Default programs setting should ensure that PDFs from File Explorer or elsewhere on your computer open in your preferred viewer. If you see this setting is being changed to Microsoft Edge, the program you're using is trying illegally to write to the 'User choice' registry key. This is a security feature to ensure that only the user (not a program) can change the defaults.
You may right click on one of the PDF files and click on Properties and under General tab click on Change in front of Open with and select your desire PDF reader.
