Hello,
On IE there is a menu "File > New session". It allows you to log in to the same web site with 2 differents accounts at the same time.
How can I do that with Edge ? If I open a new window, it is considered as the same session and when I browse to my website I cannot log in with a new account, Edge uses the previous account.

This is fine, but in IE we were able to open multiple "New Sessions" which was helpful as our Electronic Health Record is web-based. With the "New Session" feature, we could open multiple sessions of our EHR without the cookies interfering with the other open session(s). It would be tremendously helpful if the "New Session" feature was brought into Edge and other browsers.
One of the systems/sites we use requires us to be able to start a new session if the current one has timed out. If we cannot manually start a new session, we need to close down the whole browser and then open it back up again before we can log back in. We aren't trying to use it with 2 separate profiles and our organization won't allow us to have multiple "profiles" for Edge. How would we manually start a new session, that is NOT the InPrivate session? Additionally, we don't want to interrupt OTHER sites that we have open in the previous session.

It sounds as if what you want could be achieved by using separate profiles in Edge. Each profile has its own data stores, including for cookies and other site data, favourites and history. It's quick and easy to set up a profile: just click on the profile image and then on Add profile. There's no need to sign in. You could name the new profile to match the EHR you want it to connect to.
Yes, it takes two clicks to open a 'new session' by this method (one on the profile image and the second on the profile you want to switch to), but it should serve your purpose nevertheless.

That approach will not work if the organization administrator has locked management of browser settings for security purposes. Is there a way to use virtualization to achieve same result?

With regards to your concern, you may use the InPrivate Window in Edge for you to be able to login 2 different accounts in a specific website.
To do that, in your Edge browser, press Ctrl + Shift + N or click the 3 dotted icon on the upper right of your browser and select New InPrivate Window.
