It would be great if you could improve on this in a couple of ways. First, whenever the Edge browser is updated, all the favourites on the toolbar revert to showing the icon name, so you have to go through and individually select each bookmark to switch back to Show Icon Only. Second, it would be great if there was a "Show Icon Only for Every Bookmark on the Toolbar" option.

I understand that you want to show only your favorites icon in Edge;
On the toolbar, right-click on any bookmark and select the Show Icon Only option;

There is a way, but it's one favourite at a time, and it's a bit fiddly.
There's just one of these spaces (Unicode character 0x200B)between these tildes for you to copy and paste: ~~
You apparently don't have to paste a different number of them for each one so they all have different names.
Well you have to right mouse button and click icon only I wish you could do it to all of them at once.
I've tried that it doesn't work for me.
