Good day! I'm John Dev a Windows user like you and I'll be happy to assist you today. I know this has been difficult for you, Rest assured, I'm going to do my best to help you.
During my research, I found that this feature to set the default profile in Microsoft Edge is not yet available.
As a workaround, you may try to open Edge then click 3 dots
Click Settings
Under More profiles, select the work profile > click Switch
Once done, right click the edge icon on the taskbar then select Pin to taskbar
To open the work profile, click the recently pinned Edge icon on the taskbar

Exactly, the question is when you click a link in an email (of other location), which profile will edge open?
You should be able to set this using the Default profile for external links dropdown on the page edge://settings/profiles/multiProfileSettings. If this isn't working for you, please submit feedback (press Alt-Shift-i or click ⋯ (Settings and more) > Help and feedback > Send feedback) so the engineers can investigate.

when we have somewhere html link, shortcut >> the default edge profile is opened (not pinned to taskabar) >> so changing default profile is important>> how to do it?
