As the title suggests I want to change the default search engine in all places (address bar/search box, new tab page etc to Google Australia.
I've tried to follow the steps in this support article:
Change your default search engine in Microsoft Edge - Microsoft Support
But despite repeating the first step of opening a new tab and performing a search on google.com.au it doesn't appear in the list of options as the support article says. I can manually add it to the list of search engines but I can't make it the default.
If it makes a difference I'm on MacOS Ventura latest version on a Macbook Air M2.

Good day! I'm John Dev a Windows user like you and I'll be happy to assist you today. I know this has been difficult for you, Rest assured, I'm going to do my best to help you.
Unfortunately, this feature is not yet available for the Edge New Tab Page. I would recommend sending comments and suggestion through the Help and Feedback in Edge by pressing ALT+SHIT+I. Hopefully Edge developers will notice this and release the feature in the future Edge updates.
However, you can still achieve this through Edge extensions.
Open Edge then Click 3 dots > Extensions > Get Extensions for Microsoft Edge
On the search bar, type "New Tab Page"
Click Get then add extension
Click the Custom New Tab Extension > Click Details > Manage Extension > Extension options > URL
Type: google.com.au
Save

Sorry John - you answered my question perfectly the first time, I just asked you new ones which I shall post a new question for.
However I do have a new question for you specifically related to your original response - when I type in New Tab Page in Get Extensions, I see 826 options, none of which have that exact specific name. I've attached a screenshot. Could you possibly send me a link for the specific extension, or let me know it's exact name or even show me what the icon looks like?

I apologize for the confusion; What I meant was the feature to set a desired URL to open in a new tab in Edge Browser is not yet available. Installing the Custom New Tab Extension will make google.com.au the default page when opening a new tab.

Thank you ever so much for your reply John, that was very helpful. I'd added the Momentum extension for my new tab page but I'll remove that and add the one you've suggested.
Apologies if I should start a new question for this (please tell me if that's so) but are you also able to tell me how to customise my newsfeed by blocking the topics I don't want to see? I can choose the ones I do want to see, but the other topics still appear under my interests. I see a Blocked List option below the list of topics I've selected, but I can't for the life of me work out how to add to the blocked list.
Also is there any way to stop the couple of ads that appear towards the top of the page ( not the ones in the feed itself)?
