I also have the same MS Edge version and I can easily set Google as my default browser.
Don't you have an option like in the image below?

Please try this if it helps.
Open Edge then paste this to the address bar
edge://settings/search
Press Enter
Search engine used in the address bar = select Bing(Recommended) in the drop-down list
If it is not in the list, click manage search engines
Click Add

Thank you for updating me with that information. Please try the following methods below.
**Disable or Uninstall Edge extensions
Open Edge > Click 3 dots > Extensions
Please check if one of your Extensions is forcing your search to use other search engine.
If this doesn't work, You may need to consider performing a Reset of Edge Chromium.
**Open Edge then click 3 dots > Settings
Select Reset Settings > Restore settings to their default values
Click Reset
Restart your computer

To the right of each of the entries shown in your screenshot is a ⋯ button labelled More actions when you point at it. Click on it to see the actions menu, which includes the option to Make default.
