Do you want to block YouTube from Microsoft Edge only, or do you want to block it from other browsers too?
Do you want to block it from your user account only, or from your computer only, or from your entire network?
Keep in mind that while it's possible to block the YouTube website, it's very difficult and often impossible to block YouTube videos that are embedded in web pages or apps.

That means from every user account on that computer, and no matter which web browser you use. Other computers on your network, if any, will still receive YouTube.
While there are several ways to do this, the easiest is to tell your antivirus program's firewall to block the YouTube URL: https://www.youtube.com/
Please keep in mind, as I wrote earlier, that you may not be able to block YouTube videos embedded in other web pages. And, of course, YouTube is not the only website that delivers videos.
There's more than one way to block access to websites on Edge.
You can use a website blocker extension. You can go to the Microsoft Edge Add-ons store and use search words like "website blocker" or "block websites". There are many choices. Note that the extension doesn't work in InPrivate browsing by default. To make it work, you need to allow the extension in InPrivate browsing.
You can edit the hosts file on your computer. You can find tutorials on YouTube. In addition to Edge, this method applies to any other browser on your computer.
You can also use a website blocker app.
