Ultimate has some extra multimedia features, such as Windows Media Center. It also has the ability to run multiple languages I believe. Beyond that, there's not much of a difference. And if you don't need to connect to a domain, Home Premium will probably give you everything you need and want (and more).

Also you need Windows 7 Ultimate in order to activate Bit-locker which is not featured in Win 7 Pro. Bit-locker is needed in order to run encryption protection on your hard drive and USB flash drives, without it you have to install a third party program.
Plus you have to remember that Ultimate has Bit locker drive encryption. I think this is a very cool feature to have in case someone steals your laptop. A laptop that's name brand such as Hewlett Packard is almost impossible to break into if it has Windows Seven Ultimate on it. My HP Pro book has a TPM chip like 99% of new laptops. If it was stolen the thief would have to break through the TPM / Bit locker security and the normal Microsoft security measures just to be able to log on. Currently with Ultimate, if someone stole my laptop they would have to go through this to get it to turn on. They would have to get through HP fingerprint sensor, bit locker encryption, Microsoft TPM encryption, the normal log on password, the Bios password (because they would try to reset it like you can do on older model laptops by taking out the CMOS battery 99% of people don't know exist inside their laptop) and after all that they would come to find out that because the TPM chip module is soldered directly onto the motherboard and you need a $20,000 machine to scribe the info onto a new chip and re-solder it onto the motherboard after removing the old one to get it to boot up again normally. By the time they went through all this trouble, my Computrace Lo Jack GPS security would have tracked where my laptop was at already or the program I have called Prey which takes pictures with the webcam every 10 seconds and sends them to my email catches them. Either way whoever took the damn thing would get caught!! LOL! Plus, after they were caught, when they go to sentencing for jail the judge is going to order them to buy me a brand new laptop of equal or better value because they scratched mine up and screwed it up when they stole it. ;) So I'm glad I have the bit locker encryption so even if Jason Bourne got into the hard drive it would be encrypted. ;)
