Third-party software is simply software written for Windows, but
written and sold (or given away for free) by other companies, not by
Microsoft.
How it works and how you use it is no different from software written
by Microsoft.
So, for example, you can buy Microsoft Office, and install the
programs that are part of it (Word, Excel, PowerPoint, Outlook, etc.)
from the disks that you get, and then run those programs like any
programs (Notepad, Wordpad, Internet Explorer, etc.) that came with
Windows.
Alternatively, you could buy WordPerfect Office, which is written and
sold by Corel (a third-party company), install it, and use its
component programs instead.
You could even install both Microsoft Office and WordPerfect Office
and use both--or some program from one of them and other programs from
the other one.
And to add an explanation of why its called "third-party," the first
party is the manufacturer of your computer (Dell, HP, etc.), the
second party is the writer of the operating system you run
(Microsoft), and the third-party is the writer of the software, if
it's not Microsoft.
