"Open With" menu - registry entries mysterious

I got tired of seeing an old version of Adobe Audition in my "Open With" menu for .wav files, so I tried to go to the registry to delete it. But the registry entries are really weird. Here is a screenshot of the Open With menu overlaid with regedit showing the relevant keys and values:

Other than Audition (unfortunately that entry is too general, so I can't remove 2017.1 and keep 2019) and VLC, nothing matches - none of the other media players are in the registry, and the other registry entries are goofy: Firefox (which of course can't play audio files directly) and a bunch of garbage that would make me fear malware if I was the fearful type.

Does anyone know what's going on?

    I have no interest in editing what that page is talking about (the top-level context menu items). The term "Open With" is not even mentioned, and registry entries it talks about are in a completely different area of the registry.

    I already know where in the registry the Open With lists are for all the file extensions. My problem is that they don't match what the menu is showing, and I want to know why.

    Thanks for responding, Rob, but that appears to be some sort of boilerplate answer. None of those links have anything to do with discrepancies between the Open With menu and the registry.

    The very top link I posted shows how to edit (including remove) items from the Right Click Context Menu. The right side is just place holders and can be ignored.
