I received a reply via email from a gentleman in Greece which I'd like to share here:

This is wrong answer in this case.
Several countries world wide and governments become partial sponsors so their people and education system to get in touch with recent technologies.
The number one responsible to deliver an solution this is LENOVO by selling to the customer new installation media for the specific product model under a fee naturally.
If LENOVO in the USA or Europe, considers this product as EOL and does not supply OS installation media any more, then the customer he is free to install any operating system he wishes to use. "

I do agree with the reply above:
- As is the case in Australia and some other countries in the world, the government and education institutions assist their students with schemes making computer equipment more affordable by paying by installments and at cheaper prices than retails. The
students wholly owned the computers after they graduated. My children had owned their laptops this way from their old school. The difference here is the computer is licensed with an OA or OEM licence. I'm very
interested to hear from an actual Microsoft licensing expert for their view on this case while anticipating that it will not help resolving my issue anyway.
- One working solution would have been to obtain installation disc or recovery media from the manufacturers, in this case Lenovo, but they don't offer that kind of service anymore hence no longer an option.
I followed advice from Microsoft Support posting my issue here but looking like getting nowhere.
