To my knowledge, as well as checking other forums and Microsoft's website, a scrolling screenshot is not yet possible if we are to keep it in a Microsoft environment. You would need to download a third-party application for capturing a scrolling screenshot. I would leave that option to you as to what third party screenshot software you would like to install. Please do remember that the installation of third-party apps may either be helpful or may cause additional issues to your computer.
