Your CPU has a dual channel memory controller and each channel can handle two slots. With two SO-DIMMs installed, both channels are active, but you only physically have one slot per channel on the motherboard, hence the display of all four slots with both occupied. The dual channel with Intel systems is always so that slots 1 and 2 are for a channel with 3 and 4 for the second channel.

Without knowing the specific model of laptop you own, it is not possible to answer with authority. If you want a reliable answer, edit your question to mention the specific brand and model of laptop you own.
However, we can say in general that in modern systems, the relevant data is available through DMI and SMBIOS, which can be consulted from the software. This includes the number of memory slots on the motherboard and the hardware installed in those slots. So yes, if the BIOS does not lie completely, the data shown must be reliable.
It seems quite possible that your laptop has a memory module soldered to the motherboard and an expansion slot available for expansion. This would appear as two slots for software that queries the memory hardware data, but only one of them would be available for you to use or not use as you wish, so it can be listed online as "a memory slot, an available slot" or the like.
That said, the only way to be 100% sure is to open the laptop and look at the motherboard. However, you can get very close by looking at the supplier's specifications for the model you own. Look specifically for data in permanently mounted RAM versus available RAM expansion slots.

When you purchase a computer, by default, it only has one RAM inserted and you have an option to expand the laptop's RAM by adding another one on the second slot. This explains why you only have one (1 of 2) RAM showing on the Task Manager.
