I understand that you have some doubts regarding the use of memories of 2 x 8 GB sticks or 1 x 16 GB stick and I will try to help you.
Two memory sticks enable the use of Dual Channel technology.
Dual Channel is the feature that allows the chipset or processor to communicate with two memory channels simultaneously. The memories work simultaneously and provide twice the data width of the bus. The common of DDR memories is to work with the incredible amount of 64 bits, but with the Dual Channel feature, this value “doubles” and stays in 128 bits.
However, not all motherboards support dual channel (old cards). Check with the manufacturer if your motherboard supports the use of this feature.
If you don't plan to buy more memory, use the 2 x 8GB sticks, if your motherboard supports dual channel;
If you plan to buy more memory, stick with a 16 GB stick and buy another 16 GB one.
NOTE: To activate the feature you need memories with identical frequencies, size and timings, preferably even from the same brand (this way you avoid many problems).
