How to Change or Add More Options to "Save as type: [File Type]"?

Hello,

In mid-October 2021, I saved some files that were supposed to be Word documents and text documents, but they saved as ppt, srt, and DOC files. When I open them in the only app that'll actually show me something (Notepad), it looks like someone vomited from 1 km high, and it landed on a canvas art board... and I'm trying to make sense of the mess and piece it back together.

Just recently, I tried saving a 2 images from Discord, and it gave me the same problem, but the file type it gave me was just "File".
This photo was an attempt to get a screenshot to show the only dropdown option available was the same - "All Files (*.*)".

So I downloaded the images via mobile to see what file types they were, and it says JPEG and PNG. I hadn't encountered this issue before December 2021.

I experimented a little to see if I can pull images off the web and if I can download images from email, and I can without any problems.

Any help would be much appreciated.
