I am Jaspreet Singh.
Sharing a folder simply lets users access the folder to whom they are shared over the network while mapping a drive will let the shared drive/folder be assigned a drive letter which essentially lets it be accessed as a local drive in the system itself thus allowing access to this mapped drive for locally installed programs.

While mapping a drive allows you to assign a remote drive on your network a Letter and allows it to appear in file explorer in network location like a local drive, just confirming is that correct .
