I have the option to download & install the 21h2 update via windows update in settings(currently running 21h1) & Wanted to know how much space it will take up on my main C(SSD) Drive which I use for running my pc and a HDD for storing everything else like games, videos etc so I don't have a big SSD IIRC the SSD currently has 25-28Gb available so I would like to be sure I have plenty of space

There is no exact file size for that, however the free space that you have is more than enough for the update 21H2.
