I have it partially working. I had to download the Win10 driver, then open Device Manager, select Unknown Device (the Scanner is on and connected), and manually select the driver. Adobe can see it and accept scans from it when I initiate the scan with Adobe itself.

The latest driver released is for this device is for Windows 10, this might work but probably not. You would need to wait for Fujitsu to release a newer Windows 11 driver otherwise.
