I ran into this weird question a couple of months ago.
I thought it would be gone after a reboot, but no
I'm NOT able to delete any recent items on the taskbar from Word.
But I AM able to do that by right click on other apps (like explorer or notepad)
I've tried to clear everything from this folder %APPDATA%\Microsoft\Windows\Recent\AutomaticDestinations--NO USE
I've tried to clear all the history of the most recent items ---NO USE
I've tried to disable the function from setting and turn it back on---NO USE
How come?

Download JumpListsView and find the Application ID for doc/docx files. Post the Application ID here.
Hi, I hope you are well.
I can suggest some tips
have you tried, resetting the recent items list for Word by going to
> File > Options > Advanced, and then scrolling down to the Display section and clicking on the "Clear" button next to "Show this number of Recent Documents".
The recent items list may be locked or protected in some way, preventing you from deleting items from it.
try running Word as an administrator to see if this resolves the issue.
Try clearing the File Explorer history: Open File Explorer and click on the "View" tab. Click on the "Options" button and then click on "Change folder and search options". In the Folder Options window, click on the "Clear" button next to "Clear File Explorer history".
Check the Windows Registry: Press the Windows key + R to open the Run dialog box. Type "regedit" and press Enter. Navigate to the following key: HKEY_CURRENT_USER\SOFTWARE\Microsoft\Windows\CurrentVersion\Explorer\Advanced. Look for a value named "TaskbarFavoritesEnabled" and make sure it is set to "1". If it is not set to 1, right-click on it and select "Modify" to change the value.
let me know if helps,
