Every debloat tool removes things that you might need. They have no way of knowing which services you might need now or in the future, so every one of them is a crapshoot. The more powerful and effective the tools are the greater the changes they make and the greater the likelihood of issues.
Because such tools are discouraged by Microsoft I cannot give any recommendations, nor do I know of any debloater that I would ever recommend. If you are going to use debloating tools, then you will have to do significant research into the risks and decide for yourself which risks to take. Unless you have very specific needs and know enough to determine what you can or cannot do without I would not use a debloater.
