I quite understand your need, but unfortunately, showing dial-up connections in Quick access is no longer supported in Windows 11, as it is a very old way to connect to a network.
However, if you just want to make each dial-up connection less tedious and require a lot of clicks, maybe I have another suggestion, try adding a shortcut to this dial-up connection on the desktop.
Search for the Control Panel in the taskbar and open it. Click "Network and Internet" - "Network and Sharing Center" - "Change Adapter Settings". On this page, you can see all the network connections that have been created, find your new dial-up connection icon, right click on it, and then create a shortcut. This will generate an icon on your desktop that you can tap each time you want to use a dial-up connection.
