How can I set the default keyboard to use.

I'm Christine, an Independent Advisor and a Windows user like you. I can see here that you would like to set your default keyboard to ENG-ES. No worries, I'll do my best to help you.

You may change your keyboard layout by pressing Windows key + Spacebar, on the right part of your taskbar, you will be asked to choose your preferred keyboard layout.

You may also do it from Settings, please open the Settings and choose Time & Language then Language and Region. Click the 3 dots next to your preferred language and move it to the top.

In that case, check to see if the language pack for the ENG/ES language has been installed like below.
