i woke up this morning to find out that all my printers have changed their models to HP M101-M106 despite i don't have this model installed and i have canon instead.
On top of that, when i double click on them, it says "no task are available on this page".
I think it occurred after an update for windows. 22H2 ver 22621.2715
any ideas?

The indication is that HP released an update with incorrect metadata. Where the device ID should be, it shows all local printers, hence the error.
The folder of metadata is: %PROGRAMDATA%\Microsoft\Windows\DeviceMetadataCache\dmrccache\tr\d3a162c7-a388-4099-b63d-265639514cc0
Removing the folder and reinstalling the driver with correct metadata should resolve the issue.

Some issues related to printer configurations are being observed on Windows devices which have access to the Microsoft Store. Microsoft is investigating this issue and coordinating with partners on a solution.
Symptoms can include the following:
Note: Our investigations indicate that this issue is not caused by an HP update. In most cases, it should be possible to use the printer as expected, including queueing printing jobs, as well as other features such as copy, scan, or fax. Printers on the device will continue to use the expected drivers for printer operations. However, this issue might affect associations with other manufacturer-supplied printer apps used to extend basic printer capabilities. If this is the case, some or all of those extended functions might not work.
As the symptoms are related to the automatic installation of the HP Smart app, Windows devices which do not have access to the Microsoft Store are not expected to be affected by this issue.

We think it's to do with the printer images Microsoft is pulling down from the Internet. I saw the printers refresh and change right in front of my eyes.
We have multiple print servers on both 2016 and 2019 that have the same issue.
We restored a backup of a VM from last night (same updates) and spun it up offline. It no longer had the issue, which leads me to believe it's internet related and not update related.
Also, if you go into the advanced properties of the printer and look at the driver, it's still correct.

There are many people reporting this same problem where all printers are now showing as a HP LaserJet M101-M106, it seems to be a problem caused by a recent update.
Try uninstalling the latest Windows update to see if that resolves this, and also, open the Feedback Hub (Windows Key + F0 and report this problem to the Windows developers so they can investigate this.
