I solved this - quite straightforward. Rather than delete the post I give the solution here in case other people encounter it.
Settings -> Appearance and accessibility -> Layout -> List

I just migrated to the 'new' Teams desktop app for Mac (Feb 2024).
In the old desktop app, on clicking 'Teams' in the sidebar I was presented with a directory-like structure of all teams, and all channels. This made it very easy to track multiple conversations across different teams and find new posts.
In the new teams, clicking on 'teams' gives me a set of icons, one per team. I then need to select one team before I see the channels. This means I have no global picture of chats/channels/activity across all my teams. Is there any way to recover this?

I am on the new Teams as well this year and have the same issue. However, under the Appearance and Accessibility, there is no Layout section or List option under any other sections. Why would this be?

Me too. Until I mazimised the app to the full screen. Then in the very top right of the window, click on the elipsis for settings. The settings cog inside the window only allows you to manage the teams you are in.
