Have a look above the formatting tools. Just click on Add a subject and, well, add a subject.

I just sent an e-mail to a family member about a recent trip and wanted to include the trip destination as the "subject" line of the e-mail message but I don't know how to do that now with this new OUTLOOK format. It just brings up a screen that says that I have not put in a subject line and do I still want to send the message. So, basically, I am lost here. What do I do now?

...................yes I see the Add a subject above the format tools
but it doesn't do anything ! It's just a plain inactive text.
Make a LEFT click at an open space next to Add a subject > that will remove the words > now you can type in your subject/title.

Hi MartinDavies123,
You will see the formatting buttons (if you want your text to be bold, italic, underline and etc.) when you compose a new email. On the top of the said buttons, you will see “Add a subject” as Woodg have mentioned. Click on it to type a subject for your message.

Thank you.
