The overlay view is greyed out. I cannot select or unselect it. I can see all of the calendars I need, but I have no legend for who the colors correspond to. Screen shot below:

Hi Meg,
Select your own calendar instead of Shared Calendar to check if Overlay option populate.
It may be your profile side issue. Create a new Outlook profile then test- https://support.office.com/en-us/article/Manage-profiles-or-identities-in-Outlook-for-Mac-fed2a955-74df-4a24-bef6-78a426958c4c?ui=en-US&rs=en-US&ad=US

Nothing is ticked and the option is still greyed out
Hello Meg,
Please make the mailbox account tab is not ticked. You need to expand the list and only tick the calendar you want. The maximum number of calendars is 3.
