I have hundreds of "Subscriptions" in my Outlook.com Subscription list. I never signed up for these, the majority of them are spam for sites or information I would never have accessed (Example: as a female, I am not in the least interested in how to make my "member" bigger to please my woman. I also have never utilized a dating site, have been married for years, and certainly have no interest in meeting any women). How do I get rid of this list? It may explain why I'm getting so many spam emails now, since apparently I've been signed up for subscriptions somehow.

Each entity in my Subscription list is a legitimate correspondent.
Perhaps Google will appreciate your "free" services...
Microsoft itself is phishing. Have you considered this?
The problem is not junk mail. The problem is Microsoft collecting information regarding our business contacts without our knowledge. We cannot delete or edit the entries.

I am an independent advisor, and I am trying to help other users in Community with my experience in Microsoft products.
Spammers are using malformed addresses and scripts that are subscribing email address automatically whenever that email reaches inbox. It is hard to dealt with that form of spam. I would suggest not to try unsubscribing, as that notifies the spammers that the Inbox is active and they can start sending more spam. I encourage you to submit the feedback here https://outlook.uservoice.com/forums/284136-out... so maybe at some point developers will make some changes,
As for Junk in general, there are couple of ways to deal with scammers and unwanted emails and improve how your anty filter will work (I am sure that you are aware of some and you are using them, but maybe additional information in support articles will help you):
