Change default note colour in Outlook

Thanks for posting questions in Microsoft Community.

I think new version Outlook cannot change default colour for new notes, it is by design. Users can only create a note first then select a category to change the colour.

In Outlook, navigate to 'Notes' (not Mail or Tasks or People) and click 'New Note' and prepare to be blinded by yellow, especially blinding since I use dark mode.

I checked from my side, but currently there is not any particular settings option available to achieve this specific requirement.

Yes, I have gone through your scenario, I believe that it is very required things, and to make some convenient or easy way, would you mind to sharing your valuable suggestion directly to our product developer team via feedback portal? Because they are regularly reviewing users' shared experience on feedback portal, and they can update or do necessary changes on product service in future based users' shared experience or valuable suggestion.
