Utterly ludicrous that in 2024 we still have to deal with terrible HTML support in Office (sorry Microsoft!!) apps. A way to reliably workaround this is:
- Create your signature in Word, formatted as you want it.
- Copy and paste as signature in Outlook. Any tables will have collapsed borders. Save it.
- Create a new email using the new signature.
- On the email, edit the signature to remove the table borders.
- Copy and paste the modified email signature back into the signature editor and save it.
Hey presto - the signature now doesn't have table borders!

P.S. Microsoft, please get your act together. It's 2024 and we shouldn't be having these issues. Update Office to use Edge HTML rendering so we can all finally use properly formatted emails using full, modern CSS. Yes, you're decades behind the curve so we'll still have to use 90's email formats until everyone get's a properly working Outlook. And despite your daft attempt to rename Office to Microsoft Apps we'll all still refer to Office apps as Office to distinguish the suite from the countless other apps you have. What a complete waste of time and effort that was, when you could have been working on making your apps actually better.
