I apologize for the issue you are experiencing. I understand your frustration with the new Outlook version's behavior of automatically adding new employees to your contact groups. This change can indeed be problematic, especially if you have a large number of groups that you manage. Based on the provided contexts, it seems that the new Outlook version has removed the ability to uncheck the option to automatically add new members to a group. This is a significant change from the "Classic" Outlook version, where you could control this setting.
Keep in mind that since the new outlook is still in active development, Microsoft is constantly working to improve its products and add many new features to the new outlook. I suggest you take a look at the Microsoft Outlook blog Things to expect in the new Outlook for Windows - Microsoft Community Hub or the Microsoft 365 roadmap | Microsoft 365 for any feature updates.
