how to change theme color on Outlook for Mac?

The theme colors on my Outlook for Mac suddenly changed for no reason. I don't like the new color (orange). I tried to find directions for changing the colors, but all the directions tell me to click on tabs that don't seem to exist on my Outlook. For example, I can not find "Options" or "Preferences" tabs.

What has changed: the color of the ribbon across the top, the color of highlighted emails, the color of the subject of the email, the number of unread emails, the dot next to each unread email, highlighted/selected folders, etc.

How do I change to another color?

How do I avoid this happening again? Why did it happen?

Perhaps related: a few weeks ago I started getting home screen for my desktop. Somehow I can sometimes manage to go back and forth between the two home screens, but I don't really know how to do that. The two screens are slightly different - different apps or documents might be open, for example. How do I get rid of this? I just want one home screen.

    Switch to Dark Mode: You can switch to Dark Mode, which alters the overall colour scheme. Go to the Apple menu at the top left corner, select "System Preferences," then "General." Choose "Dark" mode. Launch Outlook again, and it should reflect the system setting.
