Switch to Dark Mode: You can switch to Dark Mode, which alters the overall colour scheme. Go to the Apple menu at the top left corner, select "System Preferences," then "General." Choose "Dark" mode. Launch Outlook again, and it should reflect the system setting.
Check Outlook Version: It's possible your version of Outlook might have a future update with theme options. Check for updates by going to "Outlook" on the top menu and selecting "About Outlook." If an update is available, it will be downloaded and installed automatically.
Why Did the Colours Change? There are a few reasons why your Outlook colours might have changed:
