Hi, in the previous version of outlook there was an icon in the "options" tab to change page color, to change the white background of emails. Now I can't find it, how can I change it? Thank you.

The removal of this feature is having a huge impact on myself too. I used to have dark blue text on a mild yellow background which assisted my working all day in outlook. Why do Microsoft keep messing about and removing these features? Totally not appropriate.
Yes, please bring this feature back! And in the meantime, change your "help" page items and links to not waste people's time telling them to go to the Options tab and navigate to Page Color. Super frustrating to see everything in Google - including links to Microsoft's own how-to pages - give this advice. I really had to dig to find this thread to confirm there is no such option.
An email was sent to me recently with positive feedback for something my org experimented with. Unfortunately, the background is gray and competes with the black text of the email. I need to be able to change or remove the background before forwarding it to my boss... but apparently I can't because of "New Outlook"? Sometimes "new" is not an upgrade! :-(
Please prioritize the restoration of this feature. Thanks!

Based on your description and according to the request related to change page colorin New Outlook for Windows. I have checked from our side, and seems at this moment it isn't feasible in New Outlook for Windows. We do apologize not able to meet your requirements.
