In the top right of the message viewer, there is a button that is a sun/moon that will change the background of the message to white or black. This is SEPARATE from Outlook's theme. It is located next to the forward/ reply buttons. I am using a Mac so maybe it is different for Window users but it worked for me!
Message Background Dark Mode
This morning I came in to work and it looks like Outlook 365 for Windows had an update. All of my messages now appear with a white background instead of in dark mode while my theme is set to black.
How can I get my messages set back to dark mode in this week's update?

2024-01-08T20:56:26+00:00 I have office theme already set to black. The problem is that the message body is black text on white background even when set to plain text mode. "Never change the message background color" is unchecked. Last week before the update, message bodies were following my set theme.

Based on the version you have shared it seems you are using Classic Outlook.
If it is Outlook Classic go :
- select File, then select Office Account.
- Under Office Theme, select Black.
- Select the back and your outlook background will be in black mode
If you are using New outlook please
1-Views setting
2-General
3-Appearance and select dark and save
