As it's an MS app, I want to be sure I won't cause any problems to my general MS usage by doing so.

I was about to send an email in Outlook just now and there's a CoPilot logo in the main body of the email text space.
I've read messages on here already and see that there's no way to disable CoPilot. No words.
Anyway, my question is: What is the function of CoPilot in my Outlook email account? What is it actually doing?
Anything, or nothing?
Thanks for any advice.
ETA: I've just noticed an option to uninstall CoPilot. Am I going to cause any issues if I uninstall it?

According to your description, I understand that you have installed a separate application of Copilot in your current Windows system, right?

You are free to uninstall this application and reinstall it when needed.
However, the separate application software is not related to the functions of Copilot integrated in Office, and uninstalling the application will not turn off the Copilot function in your Outlook software.
I noticed that you have selected New Outlook in the current question section. If you want to turn off the Copilot function in New Outlook, you need to turn off the connection experience. However, the connection experience includes more than just Copilot.
You need to first confirm whether you need the content in the connected experience:

After confirming that the above content is not needed, you can turn off Copilot in Outlook by the following method:
Turn off "Experiences that analyze content" in "Settings - General - Privacy and Data - Privacy Settings", and Copilot or spell check will not be available. You can try to turn off "Experiences that analyze content" and then check whether it is no longer displayed in the new Outlook.
