I would like to customized the View Bar at the left of the screen to show those views that I regularly use and delete or move down those views that I do not use. How do I do this?

Look for the Organizer. You can delete Views with it.
To remove views from the view bar or the shortcut menu, edit the view (More Views) and clear the check from the "show in menu" check box. Copy that modified view back to Global.mpt using the organizer. Now the view will not show in new projects, but the view will still exist.

I've already deleted the views in the Organizer from the specific project that I'm working on. It is correct in Organizer, but when I go back to the Gantt view the View Bar on the left still contains views that I've deleted out of the Organizer. Should I be deleting them out of the Global Template? I didn't want to delete from the Global template for fear that I would delete the unwanted views from all projects.
