Usually it is an issue with the antivirus on access scan . Do you have any third party antivirus installed ?
Have you added the 'Microsoft required' exclusions to your AV settings?

To get logs you can use Process Monitor. Process Monitor is an advanced monitoring tool for Windows that shows real-time file system, Registry and process/thread activity. https://learn.microsoft.com/en-us/sysinternals/downloads/procmon
