Take any sample structure having few hardcoded field-values, few dynamic field-source values where these field- values are part of parent arrays and it's child arrays. -

Little unclear with ask here. You mean to getting data from oracle table/view as json in to Azure Data factory?
If yes, then you can consider using Lookup activity which takes Oracle data set. Leverage query option inside lookup activity to write query which you would like to execute. The output of the query will be returned as json in lookup activity output json.
Once the lookup activity execution completes, from the activity output json you can pass desired details to your API request body. You should consider using web activity here to make REST API call. Please check below video that explains how to pass output json values from one activity to another.
