SharePoint Subscription Server Edition - training?

Hi, we are planning on upgrading from SharePoint 2016 to SharePoint Subscription Server in the next year. I'm wondering if there are any training materials or videos available yet (here or on youtube/LinkedIn Learning) for basic website editing? Overview of the ribbon, how to edit pages, sending pages through approval workflow, etc? We'd like to see how much we'll need to overhaul our internal training documents. Thank you!
