Data protection and sensitive information to strore in SP online

Hi Friends,

My client wants to store some sensitive data into a sp online site.

1) I have tried IRM but it has limitations for the file types which is causing issues.

2) What would be the best options for me to store the data, protect it ? Sensitivity labels?
If yes then can I apply sensitivity label policy just to one site?

Yes, you could use sensitivity label for data protection. In addition, you could through control permission, external sharing settings and access from unmanaged devices to protect data.

You could apply sensitivity label for one site collection as following picture shows.
