I try to check the group policy list for the MS Edge Chromium browser but I did not get any policy to hide the settings page/option in the MS Edge browser.
So at present, there is no way to hide/disable the settings page/option.
However, you can try to refer to the other policies and try to set it. It may help you to control hide/disable some settings for the Edge browser.
If you think that there should be a GPO to hide/disable settings then I suggest you press the ALT + SHIFT + I key in the Edge browser and try to provide your feedback to Microsoft.

User Configuration > Policies > Administrative Templates > Microsoft Edge > Block access to a list of URLs
