I understand your requirement to replace DPM with MARS. Short answer, there is no procedure replacement.
MARS is complete different from DPM where MARS was design to backup files and folders on small – medium on premise environment while by other hand DPM was design as robust backup application which can backup many different type of workloads in high scale. Reference to - Azure Backup architecture
If the intention is to backup machines *.vhdx files from virtual machines which are running on Hyper-V then I do not recommend. Instead I would recommend DPM which have the capability to backup those virtual machines entirely including capability to perform file level restore - item level restore from within the backed up virtual machines disk recovery points.
Procedure for replacement would be to remove DPM Agents from Protected Servers and install MARS on the required server which needs to be backed up. Although before remove operation you should decide if requires to stop and delete data or retain for restoration purposes on DPM side.
Important: (Keep in mind that, in case of restore DPM Agent needs to be installed).
